Object of this declaration is the organic ricotta made in the Granarolo plant of Usmate-Velate (MB). Ricotta is classified as dairy product and not as cheese since it is obtained through the coagulation of the proteins of whey (instead of casein), that is part of the liquid separated from the curd during cheese production.
