Instructions

  1. Mix all the ingredients for the marinade in a bowl and pour over the chicken
  2. Rub the marinade over the chicken and rub it into the skin, leave in the fridge for 1-2 hours
  3. Heat the olive oil and butter in the tajine and fry the chicken until golden brown
  4. Add the rest of the marinade to the tajine and add water until the meat is almost under water
  5. Bring to the boil, put the lid on the tajine and let it stew for about 45 minutes, turning the chicken regularly
  6. Add the pickled lemons, olives and halve of the thyme. Stew for another 20 minutes
  7. Add salt and pepper to taste and add the rest of the thyme
  8. Serve with couscous or bread
