Instructions

  1. Boil the lentils for about 15 minutes until soft but not mushy
  2. Fry up the onions and mushrooms with the curry powder and allow to cool down.
  3. Add eggs one at a time.
  4. Take the spring roll sheets and add the egg mixture in the middle.
  5. Fold into an envelope, using the egg from the egg mixture to glue the edges.
  6. Shallow fry in low heat vegetable oil for about 5 minutes each, flipping once or twice.
